KETO KRISPY KREME DONUTS

Ingredients:
For the Donuts:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or other keto sweetener)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon (optional, for flavor)
- 2 large eggs
- 1/4 cup unsweetened almond milk (or any low-carb milk)
- 1 tsp vanilla extract
- 1/4 cup melted butter (or coconut oil)
- 1/2 tsp apple cider vinegar (to react with the baking powder for fluffiness)
For the Glaze:
- 1/4 cup powdered erythritol (or sweetener of choice)
- 2 tbsp unsweetened almond milk (or heavy cream for a richer glaze)
- 1/2 tsp vanilla extract
- Pinch of salt

Instructions:
For the Donuts:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Lightly grease a donut pan with butter or coconut oil, or use a silicone pan.
- Mix Dry Ingredients:
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon. Whisk well to remove any lumps.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the eggs, almond milk, vanilla extract, melted butter, and apple cider vinegar.
- Combine:
- Slowly add the wet ingredients to the dry ingredients, mixing until smooth. The batter should be thick but pourable. If it’s too thick, add a little more almond milk to get the right consistency.
- Fill the Donut Pan:
- Spoon the batter into the donut pan, filling each cavity about 3/4 full.
- Bake:
- Bake the donuts for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Let the donuts cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
For the Glaze:
- Make the Glaze:
- In a small bowl, whisk together the powdered erythritol, almond milk (or cream), vanilla extract, and a pinch of salt until smooth. If the glaze is too thick, add a little more milk.
- Dip the Donuts:
- Once the donuts are completely cooled, dip the top of each donut into the glaze. You can also drizzle the glaze over the donuts for a more rustic look.
- Set the Glaze:
- Allow the glaze to set for about 10 minutes before serving.
