KETO KRISPY KREME DONUTS

Ingredients:

For the Donuts:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or other keto sweetener)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional, for flavor)
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • 1 tsp vanilla extract
  • 1/4 cup melted butter (or coconut oil)
  • 1/2 tsp apple cider vinegar (to react with the baking powder for fluffiness)

For the Glaze:

  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 2 tbsp unsweetened almond milk (or heavy cream for a richer glaze)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

For the Donuts:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Lightly grease a donut pan with butter or coconut oil, or use a silicone pan.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon. Whisk well to remove any lumps.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk together the eggs, almond milk, vanilla extract, melted butter, and apple cider vinegar.
  4. Combine:
    • Slowly add the wet ingredients to the dry ingredients, mixing until smooth. The batter should be thick but pourable. If it’s too thick, add a little more almond milk to get the right consistency.
  5. Fill the Donut Pan:
    • Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  6. Bake:
    • Bake the donuts for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Let the donuts cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

For the Glaze:

  1. Make the Glaze:
    • In a small bowl, whisk together the powdered erythritol, almond milk (or cream), vanilla extract, and a pinch of salt until smooth. If the glaze is too thick, add a little more milk.
  2. Dip the Donuts:
    • Once the donuts are completely cooled, dip the top of each donut into the glaze. You can also drizzle the glaze over the donuts for a more rustic look.
  3. Set the Glaze:
    • Allow the glaze to set for about 10 minutes before serving.
