Instructions:
- Prepare the Ingredients:
- Slice the kielbasa into half-moons.
- Dice the onion and mince the garlic.
- Cut the cauliflower into florets.
- Cook the Kielbasa:
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the kielbasa slices and cook until they start to brown, about 5-7 minutes. Remove the kielbasa from the pot and set aside.
- Sauté the Vegetables:
- In the same pot, add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Cook the Cauliflower:
- Add the cauliflower florets to the pot and stir well to combine with the onions and garlic.
- Pour in the chicken or vegetable broth and bring to a boil.
- Simmer:
- Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
- Blend the Soup:
- Use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender. Be cautious when blending hot liquids.
- Add Cream and Cheese:
- Return the blended soup to the pot (if using a blender).
- Stir in the heavy cream and shredded cheddar cheese (if using). Heat until the cheese is melted and the soup is heated through.
- Season:
- Add the dried thyme, dried basil, paprika, salt, and black pepper to taste. Stir well.
- Add Greens (Optional):
- If using spinach or kale, stir it into the soup and cook for an additional 2-3 minutes until wilted.
- Finish and Serve:
- Return the cooked kielbasa to the pot and heat through.
- Garnish with fresh parsley or chives before serving.
Tips:
- For a thicker soup, you can blend more of the cauliflower or add a low-carb thickening agent if desired.
- Adjust seasoning to your taste, and add a splash of lemon juice for extra brightness if desired.
Enjoy your Keto Kielbasa Soup with Cauliflower! It’s a comforting and satisfying meal that fits perfectly into a low-carb lifestyle.
