KETO KIELBASA SOUP WITH CAULIFLOWER

Ingredients:

  • 14 oz (400 g) kielbasa sausage, sliced into half-moons
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large head of cauliflower, cut into florets
  • 4 cups (960 ml) chicken or vegetable broth (ensure it’s low-carb and sugar-free)
  • 1 cup (240 ml) heavy cream
  • 1 cup (120 g) shredded cheddar cheese (optional, for added creaminess)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 cups baby spinach or kale (optional, for added greens)
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Slice the kielbasa into half-moons.
    • Dice the onion and mince the garlic.
    • Cut the cauliflower into florets.

  8. Season:
    • Add the dried thyme, dried basil, paprika, salt, and black pepper to taste. Stir well.
  9. Add Greens (Optional):
    • If using spinach or kale, stir it into the soup and cook for an additional 2-3 minutes until wilted.
  10. Finish and Serve:
    • Return the cooked kielbasa to the pot and heat through.
    • Garnish with fresh parsley or chives before serving.
