Ingredients:

  • Chicken:
    • 4 boneless, skinless chicken breasts or thighs
    • 1 cup almond flour
    • 1 cup grated Parmesan cheese
    • 2 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • 1 tsp dried thyme
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1/2 tsp cayenne pepper (optional for heat)
    • 2 large eggs
    • 2 tbsp heavy cream
  • Oil for frying:
    • Avocado oil or coconut oil (enough for shallow frying)

Instructions:

  1. Prepare the chicken:
    • Pat the chicken dry with paper towels and set aside.
  2. Prepare the breading mixture:
    • In a large bowl, mix together the almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, dried oregano, dried basil, dried thyme, salt, black pepper, and cayenne pepper (if using).
  3. Prepare the egg wash:
    • In another bowl, whisk together the eggs and heavy cream.
  4. Bread the chicken:
    • Dip each piece of chicken into the egg wash, then coat it well with the almond flour mixture. Press the breading onto the chicken to ensure it sticks.
  5. Heat the oil:
    • In a large skillet or frying pan, heat enough oil to cover the bottom of the pan over medium-high heat. You want the oil to be hot but not smoking.
  6. Fry the chicken:
    • Place the breaded chicken pieces into the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes per side, depending on the thickness of the chicken.
  7. Finish cooking:
    • If the chicken pieces are thick, you may need to finish cooking them in a preheated oven at 350°F (175°C) for about 10-15 minutes to ensure they are cooked through.
  8. Drain and serve:
    • Remove the fried chicken from the pan and place it on a plate lined with paper towels to drain any excess oil. Serve hot with your favorite low-carb sides or dipping sauce.
