Ingredients:
- Chicken:
- 4 boneless, skinless chicken breasts or thighs
- 1 cup almond flour
- 1 cup grated Parmesan cheese
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional for heat)
- 2 large eggs
- 2 tbsp heavy cream
- Oil for frying:
- Avocado oil or coconut oil (enough for shallow frying)

Instructions:
- Prepare the chicken:
- Pat the chicken dry with paper towels and set aside.
- Prepare the breading mixture:
- In a large bowl, mix together the almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, dried oregano, dried basil, dried thyme, salt, black pepper, and cayenne pepper (if using).
- Prepare the egg wash:
- In another bowl, whisk together the eggs and heavy cream.
- Bread the chicken:
- Dip each piece of chicken into the egg wash, then coat it well with the almond flour mixture. Press the breading onto the chicken to ensure it sticks.
- Heat the oil:
- In a large skillet or frying pan, heat enough oil to cover the bottom of the pan over medium-high heat. You want the oil to be hot but not smoking.
- Fry the chicken:
- Place the breaded chicken pieces into the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes per side, depending on the thickness of the chicken.
- Finish cooking:
- If the chicken pieces are thick, you may need to finish cooking them in a preheated oven at 350°F (175°C) for about 10-15 minutes to ensure they are cooked through.
- Drain and serve:
- Remove the fried chicken from the pan and place it on a plate lined with paper towels to drain any excess oil. Serve hot with your favorite low-carb sides or dipping sauce.
