Keto Instant Pot Steak Fajitas Recipe

Ingredients:
- 1 lb (450g) flank steak or skirt steak, sliced into thin strips
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- 1/4 cup beef broth or water
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Avocado slices (optional, for serving)
- Shredded cheese (optional, for serving)
Instructions:
- Prepare the Instant Pot: Set your Instant Pot to the “Sauté” mode and add the olive oil. Once hot, add the sliced steak and sear for about 2-3 minutes on each side until browned. Remove the steak and set it aside.
- Sauté Vegetables: In the same Instant Pot, add the sliced onions and bell peppers. Sauté for about 3-4 minutes until they start to soften. Add the minced garlic and cook for another minute.
- Add Spices: Sprinkle the chili powder, cumin, paprika, onion powder, cayenne (if using), salt, and pepper over the vegetables. Stir to coat evenly.
- Add Steak and Broth: Return the seared steak to the Instant Pot. Pour in the beef broth (or water) and stir to combine everything.
- Pressure Cook: Close the lid of the Instant Pot, seal the valve, and set the Instant Pot to “Manual” or “Pressure Cook” mode for 5 minutes on high pressure. Once the cooking time is complete, perform a quick release.
- Finish and Serve: Open the Instant Pot, squeeze in the lime juice, and stir everything together. Taste and adjust seasoning if necessary.
- Serve: Serve the steak fajitas with avocado slices, chopped cilantro, and shredded cheese if desired. You can eat it as is, or serve it on a bed of lettuce or in low-carb tortillas.
