Ingredients:
For the Crust:
- 1 cup almond flour
- 4 tablespoons butter, melted
- 2 tablespoons powdered erythritol or preferred keto-friendly sweetener
- 1/2 teaspoon vanilla extract

- 16 oz cream cheese, softened
- 1 cup powdered erythritol or preferred keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1 cup heavy cream

Instructions:
1. Make the Crust:
- Preheat the oven to 325°F (160°C).
- Mix the Crust Ingredients:
- In a mixing bowl, combine the almond flour, melted butter, powdered erythritol, and vanilla extract. Mix until the mixture resembles coarse crumbs.
- Press into a Pan:
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
- Bake the Crust:
- Bake the crust in the preheated oven for about 12-15 minutes, or until lightly golden. Remove from the oven and let it cool completely.
2. Make the Cheesecake Filling:
- Prepare the Cream Cheese Mixture:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add Sweetener and Vanilla:
- Add the powdered erythritol (or preferred sweetener) and vanilla extract. Beat until well combined.
- Whip the Heavy Cream:
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Combine and Fold:
- Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
3. Assemble the Cheesecake:
- Spread the Filling:
- Spread the cheesecake filling evenly over the cooled crust in the springform pan.
- Chill the Cheesecake:
- Cover the cheesecake with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or preferably overnight, until set.
