Keto Hamburger Peppers and Onion Gyros

Ingredients:

For the Gyros:

  • 1 lb ground beef (80% lean)
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced (red, green, or yellow)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt (full-fat for keto)
  • 1 small cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste

For Serving:

  • Low-carb flatbread or lettuce wraps
  • Fresh lettuce, chopped
  • Cherry tomatoes, halved (optional)
  • Crumbled feta cheese (optional)

Instructions:

  1. Prepare the Tzatziki Sauce:
    • In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, salt, and pepper. Adjust seasoning to taste. Cover and refrigerate while preparing the gyros.
  2. Cook the Beef and Vegetables:
    • Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
    • Add the sliced onion, bell pepper, minced garlic, oregano, cumin, paprika, garlic powder, onion powder, salt, and pepper to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  3. Assemble the Gyros:
    • For each gyro, place a portion of the beef mixture on a low-carb flatbread or lettuce wrap.
    • Top with a generous spoonful of tzatziki sauce, fresh lettuce, and any additional toppings like cherry tomatoes and crumbled feta cheese.
  4. Serve:
    • Fold or wrap the gyros and enjoy immediately.

Tips:

  • Low-Carb Flatbread: Use store-bought keto-friendly flatbread or make your own using almond or coconut flour.
  • Variation: Substitute ground beef with ground lamb or a mix of beef and lamb for a more traditional gyro flavor.
