Keto Glazed Donuts

Ingredients:
For the Donuts:
- 2 cups almond flour
- 1/2 cup granulated erythritol (or any keto-friendly sweetener of your choice)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 3 large eggs
- 1/4 cup unsweetened almond milk (or any low-carb milk)
- 1 teaspoon vanilla extract
For the Glaze:
- 1/2 cup powdered erythritol (or any keto-friendly powdered sweetener)
- 2-3 tablespoons unsweetened almond milk (adjust for desired thickness)
- 1/2 teaspoon vanilla extract
Instructions:
For the Donuts:
- Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.
- In a large mixing bowl, whisk together the almond flour, granulated erythritol, baking powder, and salt.
- In a separate bowl, whisk together the melted unsalted butter, eggs, unsweetened almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
- Carefully spoon the batter into the greased donut pan, filling each cavity about 2/3 full.
- Bake in the preheated oven for 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.
- Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
For the Glaze:
- In a small bowl, whisk together the powdered erythritol, unsweetened almond milk, and vanilla extract until you have a smooth glaze. Adjust the amount of almond milk for your desired glaze consistency.
Assembling:
- Once the donuts are completely cool, dip the top of each donut into the glaze, allowing any excess to drip off.
- Place the glazed donuts back on the wire rack to set for about 10-15 minutes.
