Keto Garlic Parmesan Knots

Ingredients:
- For the Dough:
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 1/2 cups almond flour
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- For the Garlic Butter:
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional)

Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Dough:
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 30 seconds to 1 minute until the cheeses are melted and easily stirrable. Stir until well combined.
- In a separate bowl, whisk together the almond flour, baking powder, and salt.
- Add the cheese mixture and eggs to the dry ingredients. Mix until a dough forms. It may be a bit sticky, so you might need to use your hands to knead it into a cohesive dough.
- Shape the Knots:
- Divide the dough into 12 equal pieces. Roll each piece into a rope about 6 inches long and then shape each rope into a knot. Place the knots on the prepared baking sheet.
- Bake the Knots:
- Bake in the preheated oven for about 12-15 minutes or until the knots are golden brown.
- Prepare the Garlic Butter:
- While the knots are baking, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, but not browned. Remove from heat and stir in the Parmesan cheese.
- Coat the Knots:
- Once the knots are baked, brush them with the garlic butter mixture. You can also sprinkle a little extra Parmesan cheese and chopped parsley on top if desired.
- Serve:
- Serve warm and enjoy!
