Keto Garlic Bread Bites

Ingredients:

  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 2 teaspoons garlic powder (adjust to taste)
  • 1 teaspoon dried Italian seasoning (optional)
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dough:
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are fully melted and combined.
    • Add the almond flour, baking powder, garlic powder, and Italian seasoning (if using) to the melted cheese mixture. Mix well until a dough starts to form.
    • Add the egg to the dough and mix thoroughly until all ingredients are well combined. The dough will be sticky but firm.
  3. Shape the Bites:
    • Using your hands, form small, bite-sized balls of dough (about 1-2 tablespoons each). Place them on the prepared baking sheet, leaving some space between each bite.
  4. Bake:
    • Bake in the preheated oven for 10-12 minutes or until the bread bites are golden brown and cooked through.
  5. Prepare the Garlic Butter:
    • While the bread bites are baking, mix the melted butter with garlic powder and chopped parsley.
  6. Brush with Garlic Butter:
    • Once the bread bites are out of the oven, brush them generously with the garlic butter mixture. Sprinkle grated Parmesan cheese on top.
  7. Serve:
    • Serve warm, garnished with extra parsley if desired. Enjoy them as a side dish, appetizer, or snack!

Tips:

  • For a cheesier version, add extra shredded mozzarella on top before baking.
  • Adjust the seasoning to your preference; you can add more or less garlic powder depending on your taste.
