Keto Fruit Pizza

Ingredients:

For the Crust:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or other keto-friendly sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol (or other keto-friendly sweetener)
  • 1 teaspoon vanilla extract

For the Toppings:

  • Fresh berries (strawberries, blueberries, raspberries, etc.)
  • Thinly sliced kiwi or any other low-carb fruit of your choice
  • A few mint leaves for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a pizza pan or baking sheet with parchment paper.
  2. Make the Crust:
    • In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
    • Add the melted butter and egg, and mix until well combined.
    • Press the dough evenly onto the prepared pizza pan to form your crust.
  3. Bake the Crust:
    • Bake for about 10-12 minutes, or until the crust is golden brown.
    • Allow the crust to cool completely before adding the frosting.
  4. Prepare the Frosting:
    • In a medium bowl, beat together the softened cream cheese, powdered erythritol, and vanilla extract until smooth and creamy.
  5. Assemble the Pizza:
    • Spread the cream cheese frosting evenly over the cooled crust.
    • Arrange the fresh fruit on top of the frosting.
  6. Garnish and Serve:
    • Garnish with fresh mint leaves if desired.
    • Slice and serve!
