Keto Fruit Pizza
Ingredients:
For the Crust:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or other keto-friendly sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup powdered erythritol (or other keto-friendly sweetener)
- 1 teaspoon vanilla extract
For the Toppings:
- Fresh berries (strawberries, blueberries, raspberries, etc.)
- Thinly sliced kiwi or any other low-carb fruit of your choice
- A few mint leaves for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a pizza pan or baking sheet with parchment paper.
- Make the Crust:
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
- Add the melted butter and egg, and mix until well combined.
- Press the dough evenly onto the prepared pizza pan to form your crust.
- Bake the Crust:
- Bake for about 10-12 minutes, or until the crust is golden brown.
- Allow the crust to cool completely before adding the frosting.
- Prepare the Frosting:
- In a medium bowl, beat together the softened cream cheese, powdered erythritol, and vanilla extract until smooth and creamy.
- Assemble the Pizza:
- Spread the cream cheese frosting evenly over the cooled crust.
- Arrange the fresh fruit on top of the frosting.
- Garnish and Serve:
- Garnish with fresh mint leaves if desired.
- Slice and serve!
