Keto Fried Fritters
Ingredients:
- 1 cup zucchini, grated and excess moisture squeezed out
- 1 cup cauliflower rice, cooked and cooled
- 2 green onions, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 large egg
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Avocado oil or olive oil for frying
Instructions:
- Prepare the Vegetables:
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
- Cook the cauliflower rice according to package instructions, then let it cool.
- Mix the Batter:
- In a large mixing bowl, combine the grated zucchini, cauliflower rice, green onions, Parmesan cheese, almond flour, egg, garlic powder, salt, and pepper. Mix well until everything is evenly combined.
- Form the Fritters:
- Heat a large skillet over medium heat and add enough oil to coat the bottom.
- Take about 2 tablespoons of the mixture and form it into a ball, then gently flatten it to form a fritter shape. Place it into the skillet. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
- Fry the Fritters:
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to carefully flip them over.
- Serve:
- Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
- Serve the keto fried fritters hot, optionally with a side of sour cream or your favorite keto-friendly dipping sauce….
