Keto Fried Fritters

Ingredients:

  • 1 cup zucchini, grated and excess moisture squeezed out
  • 1 cup cauliflower rice, cooked and cooled
  • 2 green onions, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Avocado oil or olive oil for frying

Instructions:

  1. Prepare the Vegetables:
    • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
    • Cook the cauliflower rice according to package instructions, then let it cool.
  2. Mix the Batter:
    • In a large mixing bowl, combine the grated zucchini, cauliflower rice, green onions, Parmesan cheese, almond flour, egg, garlic powder, salt, and pepper. Mix well until everything is evenly combined.
  3. Form the Fritters:
    • Heat a large skillet over medium heat and add enough oil to coat the bottom.
    • Take about 2 tablespoons of the mixture and form it into a ball, then gently flatten it to form a fritter shape. Place it into the skillet. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  4. Fry the Fritters:
    • Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to carefully flip them over.
  5. Serve:
    • Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
    • Serve the keto fried fritters hot, optionally with a side of sour cream or your favorite keto-friendly dipping sauce….
