Keto French Onion Meatloaf
Ingredients
For the Meatloaf:
- 1 lb ground beef (or a mix of beef and pork)
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup almond flour (or crushed pork rinds for a lower carb option)
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
For the French Onion Sauce:
- 2 cups onions, thinly sliced
- 2 tbsp olive oil or butter
- 1 cup beef broth (low sodium)
- 1 tsp Worcestershire sauce (make sure it’s sugar-free)
- Salt and pepper to taste
- Fresh thyme or parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Onions:
- In a skillet, heat olive oil or butter over medium heat.
- Add the sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Add a pinch of salt to help draw out moisture.
- Once caramelized, set aside to cool slightly.
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground meat, chopped onions, garlic, egg, almond flour, Parmesan cheese, thyme, salt, pepper, and smoked paprika (if using).
- Mix until just combined, being careful not to overwork the meat.
- Shape and Bake the Meatloaf:
- Transfer the meat mixture to a loaf pan and shape it into a loaf. Alternatively, shape it into a loaf on a baking sheet lined with parchment paper.
- Bake for about 45-55 minutes, or until the internal temperature reaches 160°F (70°C).
- Make the French Onion Sauce:
- While the meatloaf is baking, add the beef broth and Worcestershire sauce to the skillet used for the onions.
- Bring to a simmer and let it reduce slightly (about 5-10 minutes). Season with salt and pepper to taste.
- Serve:
- Once the meatloaf is done, let it rest for about 10 minutes before slicing.
- Serve with the French onion sauce poured over the top and garnish with fresh thyme or parsley if desired.
