Keto French Onion Meatloaf

Ingredients

For the Meatloaf:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup almond flour (or crushed pork rinds for a lower carb option)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)

For the French Onion Sauce:

  • 2 cups onions, thinly sliced
  • 2 tbsp olive oil or butter
  • 1 cup beef broth (low sodium)
  • 1 tsp Worcestershire sauce (make sure it’s sugar-free)
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Onions:
    • In a skillet, heat olive oil or butter over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Add a pinch of salt to help draw out moisture.
    • Once caramelized, set aside to cool slightly.
  3. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground meat, chopped onions, garlic, egg, almond flour, Parmesan cheese, thyme, salt, pepper, and smoked paprika (if using).
    • Mix until just combined, being careful not to overwork the meat.
  4. Shape and Bake the Meatloaf:
    • Transfer the meat mixture to a loaf pan and shape it into a loaf. Alternatively, shape it into a loaf on a baking sheet lined with parchment paper.
    • Bake for about 45-55 minutes, or until the internal temperature reaches 160°F (70°C).
  5. Make the French Onion Sauce:
    • While the meatloaf is baking, add the beef broth and Worcestershire sauce to the skillet used for the onions.
    • Bring to a simmer and let it reduce slightly (about 5-10 minutes). Season with salt and pepper to taste.
  6. Serve:
    • Once the meatloaf is done, let it rest for about 10 minutes before slicing.
    • Serve with the French onion sauce poured over the top and garnish with fresh thyme or parsley if desired.

  • You can customize the meatloaf by adding other spices or herbs you enjoy.
  • Serve with a side of low-carb vegetables or a salad for a complete meal.
