Ingredients:

  • 4 large eggs
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter or oil (for cooking)
  • 2 slices of cheese (cheddar, Swiss, or your choice)
  • Cooked bacon, sausage, or ham (optional)
  • Sliced avocado, tomato, or spinach (optional for extra toppings)

Instructions:

  1. Prepare the Egg Mixture:
    • In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  2. Cook the Egg Buns:
    • Heat a non-stick skillet over medium heat and add 1/2 tablespoon of butter or oil.
    • Pour half of the egg mixture into the skillet, spreading it out to form a round, flat shape. Cook until the edges start to set, then gently flip to cook the other side. This should take about 1-2 minutes per side. Remove from the skillet and set aside.
    • Repeat with the remaining egg mixture to make another “bun.”
  3. Assemble the Eggwiches:
    • Place one egg “bun” on a plate. Top with a slice of cheese, and if desired, add cooked bacon, sausage, or ham.
    • Add any optional toppings like avocado slices, tomato, or spinach.
    • Top with the second egg “bun.”
  4. Serve:
    • Serve immediately while warm.
