Keto Eggs Benedict Quiche
Ingredients:
For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/4 tsp salt
For the Filling:
- 6 large eggs
- 1 cup heavy cream
- 1 cup shredded Swiss cheese (or your preferred cheese)
- 1 cup cooked ham or Canadian bacon, chopped
- 1 cup baby spinach (optional, for added greens)
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- Salt and pepper, to taste
For the Hollandaise Sauce:
- 3 large egg yolks
- 1/2 cup unsalted butter, melted
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- Salt and pepper, to taste

Instructions:
1. Preheat Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Crust:
- In a medium bowl, combine almond flour, Parmesan cheese, melted butter, egg, and salt. Mix until well combined.
- Press the mixture into the bottom of a 9-inch pie dish or quiche pan, forming an even layer.
- Bake for 10 minutes, then remove from the oven and set aside.
3. Prepare the Filling:
- In a large bowl, whisk together eggs and heavy cream until well combined.
- Stir in shredded cheese, chopped ham or Canadian bacon, spinach (if using), thyme, basil, salt, and pepper.
- Pour the filling mixture into the pre-baked crust, spreading it out evenly.
4. Bake the Quiche:
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted into the center should come out clean.
5. Prepare the Hollandaise Sauce:
- In a heatproof bowl over a pot of simmering water (double boiler method), whisk together egg yolks, lemon juice, and Dijon mustard until the mixture is pale and slightly thickened.
- Gradually whisk in the melted butter until the sauce is smooth and thickened.
- Season with salt and pepper to taste.
6. Serve:
- Allow the quiche to cool slightly before slicing.
- Drizzle the Hollandaise sauce over the top or serve it on the side.
