Keto Double Strawberry Cake

Ingredients

For the Cake:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 1 cup erythritol or other keto-friendly sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, diced

For the Strawberry Frosting:

  • 1 cup unsalted butter, softened
  • 1 cup powdered erythritol or other keto-friendly powdered sweetener
  • ¼ cup fresh strawberries, pureed
  • 1 tsp vanilla extract
  • 1-2 tbsp heavy cream (if needed, to adjust consistency)

For the Strawberry Filling (optional):

  • ½ cup fresh strawberries, sliced
  • 2 tbsp erythritol or other keto-friendly sweetener

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
    • In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, baking soda, and salt.
    • In another bowl, cream together the softened butter and erythritol until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract.
    • Gradually mix the dry ingredients into the wet mixture, alternating with the almond milk, until well combined.
    • Gently fold in the diced strawberries.
    • Divide the batter evenly between the prepared cake pans and smooth the tops.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  2. Prepare the Strawberry Frosting:
    • In a large bowl, beat the softened butter until creamy.
    • Gradually add the powdered erythritol, beating until smooth.
    • Mix in the strawberry puree and vanilla extract.
    • If the frosting is too thick, add heavy cream a tablespoon at a time until you reach your desired consistency.
  3. Prepare the Strawberry Filling (optional):
    • In a small bowl, toss the sliced strawberries with erythritol. Let them sit for 10-15 minutes to macerate.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate or cake stand. If using the optional filling, spread the macerated strawberries over the top of this layer.
    • Spread a layer of strawberry frosting over the strawberries.
    • Place the second cake layer on top and frost the top and sides of the cake with the remaining strawberry frosting.
  5. Decorate (optional):
    • Garnish with additional fresh strawberries or a few whole strawberries for decoration.
  6. Serve and Enjoy:
