Ingredients

For the Croissant Dough:

  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or other keto-friendly sweetener
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon xanthan gum (optional, for better texture)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 large egg
  • 1/4 cup unsalted butter, melted

For the Chocolate Filling:

  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons granulated erythritol or other keto-friendly sweetener
  • 2 tablespoons coconut oil or unsalted butter
  • 1/2 teaspoon vanilla extract

For Egg Wash:

  • 1 egg, beaten

Instructions

  1. Prepare the Dough:
    1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    2. In a large bowl, combine the almond flour, coconut flour, erythritol, salt, baking powder, and xanthan gum (if using).
    3. In a microwave-safe bowl, melt the mozzarella cheese and cream cheese together until smooth, about 30 seconds to 1 minute. Stir until fully combined.
    4. Add the melted cheese mixture, egg, and melted butter to the dry ingredients. Mix until a dough forms.
    5. Roll the dough between two sheets of parchment paper into a rectangle about 1/4 inch thick.
  2. Prepare the Chocolate Filling:
    1. In a small bowl, mix together the cocoa powder, erythritol, coconut oil or butter, and vanilla extract until smooth and well combined.
  3. Assemble the Croissants:
    1. Spread the chocolate filling evenly over the rolled-out dough.
    2. Using a pizza cutter or knife, cut the dough into triangles or strips.
    3. Roll each triangle from the wider end to the point to form croissant shapes.
    4. Place the shaped croissants onto the prepared baking sheet.
  4. Apply the Egg Wash:
    1. Brush the tops of the croissants with the beaten egg.
  5. Bake:
    1. Bake for 12-15 minutes or until golden brown and firm to the touch.
  6. Cool and Serve:
    1. Allow the croissants to cool on a wire rack before serving. Enjoy them warm or at room temperature!
