Ingredients:

- 1/2 tsp vanilla extract

For the Lemon Filling:
- 3 large eggs
- 1/2 cup powdered erythritol (or keto sweetener of choice)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tbsp lemon zest (from about 2 lemons)
- 1/2 cup heavy cream (or coconut cream for dairy-free)
- 1/2 tsp vanilla extract
- Pinch of salt

Instructions:
For the Crust:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper for easy removal.
- Prepare the Crust:
- In a medium bowl, combine the almond flour, shredded coconut (if using), powdered erythritol, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture forms a dough-like consistency.
- Press and Bake:
