Ingredients:

  • 1/4 cup melted butter (or coconut oil)
  • 1/2 tsp vanilla extract

For the Lemon Filling:

  • 3 large eggs
  • 1/2 cup powdered erythritol (or keto sweetener of choice)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

For the Crust:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper for easy removal.
  2. Prepare the Crust:
    • In a medium bowl, combine the almond flour, shredded coconut (if using), powdered erythritol, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture forms a dough-like consistency.
  3. Press and Bake:
    • Press the dough into the bottom of the prepared baking dish, making sure it’s evenly spread. Bake for 10-12 minutes, or until the crust is golden brown. Remove from the oven and let it cool slightly while you prepare the filling.
