Keto Creamy Chicken Casserole

Ingredients:-

  • 2 cups cooked chicken, shredded or cubed
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup cream cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter, for cooking

Instructions:-

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the mushrooms and cook until they start to soften, about 3-4 minutes.
  3. Add the cauliflower and broccoli florets to the skillet. Cook for another 5-7 minutes, until the vegetables are tender-crisp.
  4. Stir in the minced garlic, dried thyme, and dried basil. Cook for another minute until fragrant.
  5. Pour in the chicken broth and heavy cream. Bring to a simmer.
  6. Reduce the heat to low. Stir in the cream cheese, sour cream, and grated Parmesan cheese until the sauce is smooth and creamy.
  7. Add the cooked chicken to the skillet and stir to combine. Season with salt and pepper to taste.
  8. Transfer the mixture to a baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
  9. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.
  10. Remove from the oven and let it cool for a few minutes before serving.
