Keto Creamy Chicken Casserole

Ingredients:-
- 2 cups cooked chicken, shredded or cubed
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1/4 cup cream cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter, for cooking
Instructions:-
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the mushrooms and cook until they start to soften, about 3-4 minutes.
- Add the cauliflower and broccoli florets to the skillet. Cook for another 5-7 minutes, until the vegetables are tender-crisp.
- Stir in the minced garlic, dried thyme, and dried basil. Cook for another minute until fragrant.
- Pour in the chicken broth and heavy cream. Bring to a simmer.
- Reduce the heat to low. Stir in the cream cheese, sour cream, and grated Parmesan cheese until the sauce is smooth and creamy.
- Add the cooked chicken to the skillet and stir to combine. Season with salt and pepper to taste.
- Transfer the mixture to a baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
