Instructions:

1. Prepare the Oven and Pan:

  • Grease a loaf pan (8×4-inch) with butter or coconut oil, or line it with parchment paper for easy removal.

2. Make the Bread Batter:

  • In a large bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, and erythritol until well combined.
  • In a separate bowl, whisk the eggs, melted butter (or coconut oil), almond milk, orange juice, orange zest, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and stir until fully combined.
  • Gently fold in the chopped cranberries. If you’d like a more even distribution, you can toss the cranberries in a little almond flour before adding them to the batter to prevent them from sinking to the bottom.

3. Bake the Bread:

6. Glaze the Bread:

  • Once the bread has cooled, drizzle the glaze over the top. Slice and serve!
