Keto Cranberry Cream Cheese Soft Bread

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or sweetener of choice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh or frozen cranberries, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, cream cheese, melted butter, almond milk, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined and smooth.
  5. Gently fold in the chopped cranberries.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
