Keto Cranberry Cream Cheese Soft Bread
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or sweetener of choice
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, melted
- 1/4 cup unsweetened almond milk
- 1/2 tsp vanilla extract
- 1/2 cup fresh or frozen cranberries, chopped
Instructions:
- Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, cream cheese, melted butter, almond milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined and smooth.
- Gently fold in the chopped cranberries.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
