Keto Coconut Joys

Ingredients:

  • 1 cup shredded unsweetened coconut
  • 1/2 cup coconut oil (or unsalted butter)
  • 1/4 cup powdered erythritol (or preferred keto sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsweetened shredded coconut (for rolling)

Instructions:

  1. Melt the Coconut Oil:
    • In a medium saucepan over low heat, melt the coconut oil (or butter) until it becomes liquid.
  2. Combine Ingredients:
    • Remove from heat and stir in the powdered erythritol and vanilla extract until well combined.
    • Mix in the shredded coconut until evenly distributed.
  3. Form the Joys:
    • Use a spoon to scoop out small amounts of the mixture and roll them into balls. Place them on a parchment-lined baking sheet.
  4. Chill:
    • Refrigerate the balls for about 15-20 minutes to firm up.
  5. Coat with Cocoa Powder:
    • In a small bowl, mix the cocoa powder with the remaining shredded coconut.
    • Roll the chilled coconut balls in the cocoa mixture until fully coated.
  6. Serve:
    • Enjoy immediately or store in an airtight container in the refrigerator for up to two weeks.
