Keto Coconut Joys
Ingredients:
- 1 cup shredded unsweetened coconut
- 1/2 cup coconut oil (or unsalted butter)
- 1/4 cup powdered erythritol (or preferred keto sweetener)
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsweetened shredded coconut (for rolling)
Instructions:
- Melt the Coconut Oil:
- In a medium saucepan over low heat, melt the coconut oil (or butter) until it becomes liquid.
- Combine Ingredients:
- Remove from heat and stir in the powdered erythritol and vanilla extract until well combined.
- Mix in the shredded coconut until evenly distributed.
- Form the Joys:
- Use a spoon to scoop out small amounts of the mixture and roll them into balls. Place them on a parchment-lined baking sheet.
- Chill:
- Refrigerate the balls for about 15-20 minutes to firm up.
- Coat with Cocoa Powder:
- In a small bowl, mix the cocoa powder with the remaining shredded coconut.
- Roll the chilled coconut balls in the cocoa mixture until fully coated.
- Serve:
- Enjoy immediately or store in an airtight container in the refrigerator for up to two weeks.
