keto cinnamon sugar tortilla rolls
Ingredients:
For the tortillas:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 2 large eggs
- 2 tablespoons coconut oil or butter (melted)
- ½ teaspoon baking powder
- ¼ teaspoon salt
For the cinnamon sugar coating:
- 2 tablespoons granulated erythritol or other keto-friendly sweetener
- 1 tablespoon ground cinnamon
- 1 tablespoon butter (melted)

Instructions:
- Preheat your oven to 350°F (175°C).
- Make the tortillas:
- In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk the eggs and melted coconut oil or butter together.
- Add the wet ingredients to the dry ingredients and mix until a dough forms. It should be a bit sticky but manageable.
- Divide the dough into 4 to 6 equal portions.
- Place each portion between two sheets of parchment paper and roll out into thin circles, about 6-8 inches in diameter. If the dough sticks, you can lightly dust it with additional almond flour.
- Cook the tortillas:
- Heat a non-stick skillet or griddle over medium heat.
- Cook each tortilla for about 1-2 minutes on each side, or until lightly browned and cooked through. The tortillas should be flexible and slightly puffed. Remove from the skillet and set aside to cool.
- Prepare the cinnamon sugar coating:
- In a small bowl, mix the erythritol and cinnamon together.
- Brush one side of each tortilla with the melted butter.
- Sprinkle the cinnamon erythritol mixture evenly over the buttered side.
- Roll up the tortillas:
- Roll each tortilla up tightly, like a log or a pinwheel.
- Slice into 1-inch pieces to create the rolls.
- Optional – Bake the rolls:
- If you prefer your rolls to be a bit crispier, place the sliced rolls on a baking sheet and bake in the preheated oven for 5-7 minutes, or until they are golden brown and slightly crispy.
- Serve:
