Keto Cinnamon Rolls Recipe

Ingredients:

For the dough:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 2 tbsp erythritol (or sweetener of your choice)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • 1 tsp vanilla extract

For the filling:

  • 1/4 cup softened butter
  • 2 tbsp cinnamon
  • 1/4 cup erythritol (or your preferred sweetener)

For the glaze:

  • 2 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1/4 tsp vanilla extract
  • 2 tbsp powdered erythritol (or sweetener of your choice)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the dough:
    • In a large bowl, mix together the almond flour, coconut flour, erythritol, baking powder, and salt.
    • Add the eggs, melted butter, almond milk, and vanilla extract. Stir well until the dough forms. It will be sticky but should hold together.
  3. Shape the dough:
    • Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4-inch thick.
  4. Make the filling:
    • In a small bowl, mix the softened butter, cinnamon, and erythritol until combined.
    • Spread this cinnamon butter mixture evenly over the dough.
  5. Roll up the dough:
    • Carefully roll up the dough like a jelly roll, using the parchment paper to help. Slice the roll into 8 even pieces.
  6. Bake:
    • Place the cinnamon rolls on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  7. Make the glaze:
    • While the rolls are baking, beat together the softened cream cheese, butter, vanilla extract, and powdered erythritol until smooth.
  8. Glaze the rolls:
    • Once the cinnamon rolls are done, allow them to cool for a few minutes before drizzling the glaze over the top.
