Keto Cinnamon Rolls Recipe

Ingredients:
For the dough:
- 2 cups almond flour
- 1/2 cup coconut flour
- 2 tbsp erythritol (or sweetener of your choice)
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup unsweetened almond milk (or any low-carb milk)
- 1 tsp vanilla extract
For the filling:
- 1/4 cup softened butter
- 2 tbsp cinnamon
- 1/4 cup erythritol (or your preferred sweetener)
For the glaze:
- 2 oz cream cheese, softened
- 2 tbsp butter, softened
- 1/4 tsp vanilla extract
- 2 tbsp powdered erythritol (or sweetener of your choice)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the dough:
- In a large bowl, mix together the almond flour, coconut flour, erythritol, baking powder, and salt.
- Add the eggs, melted butter, almond milk, and vanilla extract. Stir well until the dough forms. It will be sticky but should hold together.
- Shape the dough:
- Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4-inch thick.
- Make the filling:
- In a small bowl, mix the softened butter, cinnamon, and erythritol until combined.
- Spread this cinnamon butter mixture evenly over the dough.
- Roll up the dough:
- Carefully roll up the dough like a jelly roll, using the parchment paper to help. Slice the roll into 8 even pieces.
- Bake:
- Place the cinnamon rolls on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Make the glaze:
- While the rolls are baking, beat together the softened cream cheese, butter, vanilla extract, and powdered erythritol until smooth.
- Glaze the rolls:
- Once the cinnamon rolls are done, allow them to cool for a few minutes before drizzling the glaze over the top.
