KETO CHOCOLATE WALNUT FUDGE

Ingredients:

  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup powdered erythritol (or another keto-friendly sweetener, adjust to taste)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsweetened almond butter (or another nut butter of your choice)
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (or more if you prefer)

Instructions:

  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal of the fudge.
  2. Melt Butter and Cream: In a medium saucepan over medium heat, melt the butter. Add the heavy cream and bring to a gentle simmer, stirring occasionally.
  3. Mix in Sweetener and Cocoa Powder: Reduce the heat to low. Gradually whisk in the powdered erythritol and cocoa powder until fully combined and smooth.
  4. Add Nut Butter: Stir in the almond butter until the mixture is smooth and well combined.
  5. Incorporate Vanilla: Remove the saucepan from the heat and mix in the vanilla extract.
  6. Fold in Walnuts: Gently fold in the chopped walnuts.
  7. Pour and Chill: Pour the fudge mixture into the prepared baking dish and spread it evenly.
  8. Set the Fudge: Refrigerate the fudge for at least 2-3 hours, or until it is firm and set.
  9. Cut and Serve: Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into squares and enjoy!

Storage:

Store the fudge in an airtight container in the refrigerator for up to 2 weeks. You can also freeze it for longer storage—just make sure to separate the pieces with parchment paper or wax paper to prevent sticking.
