Keto Chocolate Pumpkin Truffles

Ingredients:

  • 1 cup canned pumpkin (make sure it’s 100% pumpkin, not pumpkin pie filling)
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup keto-friendly sweetener (like erythritol, stevia, or monk fruit sweetener)
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1 tsp pumpkin pie spice (or a mix of cinnamon, ginger, nutmeg, and cloves)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup sugar-free dark chocolate (chopped or use chocolate chips)
  • 1 tbsp coconut oil (for melting the chocolate)

Instructions:

  1. Prepare the Pumpkin Mixture:
    • In a medium bowl, combine the canned pumpkin, almond flour, cocoa powder, sweetener, melted coconut oil (or butter), pumpkin pie spice, vanilla extract, and a pinch of salt.
    • Mix until the mixture is smooth and well combined. It should be slightly thick and easy to handle.
  2. Chill the Mixture:
    • Refrigerate the pumpkin mixture for about 30 minutes to make it easier to form into balls.
  3. Form the Truffles:
    • Once chilled, scoop out small amounts of the mixture and roll them into bite-sized balls (about 1 inch in diameter).
    • Place the rolled truffles on a parchment-lined baking sheet.
  4. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, combine the sugar-free dark chocolate and 1 tablespoon of coconut oil.
    • Microwave in 20-30 second intervals, stirring in between, until the chocolate is completely melted and smooth. You can also use a double boiler if you prefer.
  5. Coat the Truffles:
    • Dip each truffle into the melted chocolate, making sure it’s fully coated. You can use a fork or a toothpick to help with dipping and drizzling.
    • Place the coated truffles back on the parchment-lined baking sheet.
  6. Chill Again:
    • Refrigerate the chocolate-coated truffles for another 15-20 minutes, or until the chocolate is set.
  7. Serve and Enjoy:
    • Once set, the truffles are ready to be enjoyed. Store them in an airtight container in the refrigerator for up to a week.

Feel free to get creative with toppings or variations. You can roll the truffles in crushed nuts, unsweetened shredded coconut, or a sprinkle of extra cocoa powder for added flavor and texture!
