Keto Chocolate Cake

Ingredients:

  • 1 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup granulated erythritol or sweetener of choice
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 1/3 cup unsweetened almond milk (or any milk of your choice)
  • 1/4 cup melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a round 8-inch cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the almond flour, cocoa powder, sweetener, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs. Add almond milk, melted butter (or coconut oil), and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined and smooth. The batter will be thick but pourable.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once cooled, you can frost the cake with a keto-friendly frosting if desired, or simply dust with powdered erythritol or cocoa powder.

Notes:

  • For frosting, you can make a simple keto frosting using cream cheese, butter, cocoa powder, and sweetener, whipped until smooth and spreadable.

  • Store leftover cake in an airtight container in the refrigerator for up to 5 days.
