Keto Chicken Won-ton Cups
Ingredients:
For the Cups:
- 2 cups shredded mozzarella cheese (or a combination of mozzarella and cheddar)
For the Filling:
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 2 tablespoons cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup finely chopped green onions
- 1/4 cup finely chopped celery (optional for extra crunch)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon soy sauce or coconut aminos (for a soy-free option)
- 1/2 teaspoon ground black pepper
- Salt to taste
- 1/4 teaspoon paprika (optional, for extra flavor)
- Fresh parsley or cilantro for garnish (optional)
Instructions:
Making the Cups:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with non-stick cooking spray or use silicone muffin liners for easy removal.
- Form the Cups: Place about 1-2 tablespoons of shredded mozzarella cheese into each muffin cup. Gently press the cheese to cover the bottom and slightly up the sides, forming a cup shape.
- Bake the Cups: Bake the cheese cups in the oven for about 5-7 minutes, or until the edges are golden and the cheese is bubbly. Remove from the oven and let them cool slightly in the tin to firm up. Carefully remove the cups from the tin once they are set.
