KETO CHICKEN QUESADILLA

Ingredients:

For the Quesadilla:

  • 2 large low-carb tortillas or cheese wraps
  • 1 cup cooked and shredded chicken breast
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup chopped spinach (optional)
  • 1 tbsp olive oil or butter

For the Seasoning:

  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste

For Serving:

  • Sour cream
  • Guacamole
  • Salsa

Instructions:

  1. Prepare the Chicken:
    • Season the shredded chicken with garlic powder, onion powder, paprika, chili powder, salt, and pepper. Mix well to ensure the chicken is evenly coated with the seasoning.
  2. Cook the Vegetables:
    • In a skillet over medium heat, add a little olive oil or butter.
    • Sauté the diced bell peppers and onions until they are tender and slightly caramelized (about 3-4 minutes). If you’re adding spinach, add it during the last minute of cooking. Remove from heat and set aside.
  3. Assemble the Quesadilla:
    • Heat a clean skillet over medium heat and add a bit of olive oil or butter.
    • Place one low-carb tortilla or cheese wrap in the skillet.
    • Sprinkle half of the shredded cheese evenly over the tortilla.
    • Add the seasoned chicken and cooked vegetables evenly over the cheese.
    • Top with the remaining shredded cheese.
    • Place the second tortilla on top.
  4. Cook the Quesadilla:
    • Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese is starting to melt.
    • Carefully flip the quesadilla using a spatula and cook for another 2-3 minutes on the other side until golden brown and the cheese is fully melted.
  5. Serve:
    • Remove the quesadilla from the skillet and let it cool for a minute.
    • Cut into wedges and serve with sour cream, guacamole, and salsa on the side.

Tips:

  • If you prefer a spicier quesadilla, add some diced jalapeños or a sprinkle of red pepper flakes to the filling.
  • For extra flavor, you can add a bit of fresh cilantro to the chicken mixture.
  • Ensure that the tortillas or cheese wraps you choose are low in carbs to keep the recipe keto-friendly.
