KETO CHICKEN QUESADILLA
Ingredients:
For the Quesadilla:
- 2 large low-carb tortillas or cheese wraps
- 1 cup cooked and shredded chicken breast
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup chopped spinach (optional)
- 1 tbsp olive oil or butter
For the Seasoning:
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
For Serving:
- Sour cream
- Guacamole
- Salsa
Instructions:
- Prepare the Chicken:
- Season the shredded chicken with garlic powder, onion powder, paprika, chili powder, salt, and pepper. Mix well to ensure the chicken is evenly coated with the seasoning.
- Cook the Vegetables:
- In a skillet over medium heat, add a little olive oil or butter.
- Sauté the diced bell peppers and onions until they are tender and slightly caramelized (about 3-4 minutes). If you’re adding spinach, add it during the last minute of cooking. Remove from heat and set aside.
- Assemble the Quesadilla:
- Heat a clean skillet over medium heat and add a bit of olive oil or butter.
- Place one low-carb tortilla or cheese wrap in the skillet.
- Sprinkle half of the shredded cheese evenly over the tortilla.
- Add the seasoned chicken and cooked vegetables evenly over the cheese.
- Top with the remaining shredded cheese.
- Place the second tortilla on top.
- Cook the Quesadilla:
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese is starting to melt.
- Carefully flip the quesadilla using a spatula and cook for another 2-3 minutes on the other side until golden brown and the cheese is fully melted.
- Serve:
- Remove the quesadilla from the skillet and let it cool for a minute.
- Cut into wedges and serve with sour cream, guacamole, and salsa on the side.
Tips:
- If you prefer a spicier quesadilla, add some diced jalapeños or a sprinkle of red pepper flakes to the filling.
- For extra flavor, you can add a bit of fresh cilantro to the chicken mixture.
- Ensure that the tortillas or cheese wraps you choose are low in carbs to keep the recipe keto-friendly.
