keto chicken pot pie biscuits

Ingredients:

For the Filling:

  • 1 lb (450g) chicken breast or thighs, cooked and shredded
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup (150g) celery, diced
  • 1 cup (150g) carrots, diced (optional for strict keto)
  • 1 cup (240ml) chicken broth (ensure it’s low-carb)
  • 1 cup (240ml) heavy cream
  • 1 cup (90g) frozen peas
  • 2 tablespoons almond flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

For the Biscuits:

  • 2 cups (200g) almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (60ml) heavy cream
  • 2 large eggs
  • 1/4 cup (60g) unsalted butter, melted

Instructions:

1. Prepare the Filling:

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for another 1 minute.
  • Stir in the diced celery (and carrots if using) and cook for 5 minutes until they start to soften.
  • Add the shredded chicken to the skillet.
  • Pour in the chicken broth and heavy cream. Stir to combine.
  • Sprinkle in the almond flour to thicken the sauce, and stir well.
  • Add the dried thyme, rosemary, salt, and pepper.
  • Let the mixture simmer for 5-10 minutes, or until thickened.
  • Stir in the frozen peas and cook for another 2 minutes. Adjust seasoning as needed.

2. Prepare the Biscuits:

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the almond flour, baking powder, and salt.
  • In another bowl, mix the heavy cream, eggs, and melted butter.
  • Combine the wet and dry ingredients and mix until just blended. The dough will be somewhat thick.
  • Drop spoonfuls of the biscuit dough over the chicken mixture in the skillet or a baking dish, spacing them a bit apart.

3. Bake:

  • Transfer the skillet or baking dish to the preheated oven.
  • Bake for 20-25 minutes, or until the biscuit tops are golden brown and the filling is bubbly.

4. Serve:

  • Let the pot pie cool for a few minutes before serving. This allows the filling to set a bit.
