keto chicken pot pie biscuits
Ingredients:
For the Filling:
- 1 lb (450g) chicken breast or thighs, cooked and shredded
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup (150g) celery, diced
- 1 cup (150g) carrots, diced (optional for strict keto)
- 1 cup (240ml) chicken broth (ensure it’s low-carb)
- 1 cup (240ml) heavy cream
- 1 cup (90g) frozen peas
- 2 tablespoons almond flour
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
For the Biscuits:
- 2 cups (200g) almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup (60ml) heavy cream
- 2 large eggs
- 1/4 cup (60g) unsalted butter, melted

Instructions:
1. Prepare the Filling:
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute.
- Stir in the diced celery (and carrots if using) and cook for 5 minutes until they start to soften.
- Add the shredded chicken to the skillet.
- Pour in the chicken broth and heavy cream. Stir to combine.
- Sprinkle in the almond flour to thicken the sauce, and stir well.
- Add the dried thyme, rosemary, salt, and pepper.
- Let the mixture simmer for 5-10 minutes, or until thickened.
- Stir in the frozen peas and cook for another 2 minutes. Adjust seasoning as needed.
2. Prepare the Biscuits:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the almond flour, baking powder, and salt.
- In another bowl, mix the heavy cream, eggs, and melted butter.
- Combine the wet and dry ingredients and mix until just blended. The dough will be somewhat thick.
- Drop spoonfuls of the biscuit dough over the chicken mixture in the skillet or a baking dish, spacing them a bit apart.
3. Bake:
- Transfer the skillet or baking dish to the preheated oven.
- Bake for 20-25 minutes, or until the biscuit tops are golden brown and the filling is bubbly.
4. Serve:
- Let the pot pie cool for a few minutes before serving. This allows the filling to set a bit.
