KETO CHICKEN BACON RANCH CASSEROLE
Ingredients:
- 3 cups cooked, shredded chicken (rotisserie chicken works well)
- 6 slices bacon, cooked and crumbled
- 1 cup ranch dressing (make sure it’s low-carb or homemade)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup chopped broccoli (optional, for added veggies)
- Fresh parsley or chives for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Ingredients: In a large bowl, combine the shredded chicken, crumbled bacon, ranch dressing, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
- Add Cheese: Stir in half of the shredded cheddar and mozzarella cheese.
- Optional Veggies: If using broccoli or other vegetables, fold them into the mixture.
- Assemble the Casserole: Transfer the mixture to a baking dish and spread it evenly. Top with the remaining cheddar and mozzarella cheese.
- Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Garnish: Garnish with fresh parsley or chives if desired.
- Serve: Let it cool for a few minutes before serving.
