KETO CHICKEN BACON RANCH CASSEROLE

Ingredients:

  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 6 slices bacon, cooked and crumbled
  • 1 cup ranch dressing (make sure it’s low-carb or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chopped broccoli (optional, for added veggies)
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Ingredients: In a large bowl, combine the shredded chicken, crumbled bacon, ranch dressing, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  3. Add Cheese: Stir in half of the shredded cheddar and mozzarella cheese.
  4. Optional Veggies: If using broccoli or other vegetables, fold them into the mixture.
  5. Assemble the Casserole: Transfer the mixture to a baking dish and spread it evenly. Top with the remaining cheddar and mozzarella cheese.
  6. Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  7. Garnish: Garnish with fresh parsley or chives if desired.
  8. Serve: Let it cool for a few minutes before serving.
