Keto Cherry Pie Bites

Ingredients

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1/4 cup melted butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Cherry Filling:

  • 1 1/2 cups frozen or fresh pitted cherries
  • 1/4 cup water
  • 2 tablespoons erythritol or another keto-friendly sweetener
  • 1 tablespoon lemon juice
  • 1/4 teaspoon xanthan gum (for thickening)
  • 1/2 teaspoon vanilla extract

Instructions

For the Crust:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
  2. Prepare Crust: In a medium bowl, mix the almond flour, coconut flour, erythritol, melted butter, egg, vanilla extract, and salt until well combined.
  3. Form Crust: Press about 1 tablespoon of the crust mixture into the bottom of each mini muffin cup, pressing it up the sides to form a cup shape.
  4. Bake Crust: Bake for 8-10 minutes, until lightly golden. Remove from the oven and let cool.

For the Cherry Filling:

  1. Cook Cherries: In a small saucepan, combine the cherries, water, erythritol, and lemon juice. Bring to a boil over medium heat, then reduce the heat and simmer for about 5 minutes, stirring occasionally, until the cherries are soft.
  2. Thicken Filling: Sprinkle the xanthan gum over the cherry mixture and stir well to combine. Continue cooking for another minute until the filling thickens. Remove from heat and stir in the vanilla extract. Let the filling cool slightly.

Assembly:

  1. Fill Crusts: Spoon the cherry filling into each baked crust cup, dividing it evenly.
  2. Optional Topping: If desired, sprinkle a small amount of additional almond flour or crushed nuts on top for extra texture.
  3. Chill or Serve: You can serve these bites immediately or chill them in the refrigerator for a firmer texture.

  • Optional Variations: You can add a dollop of whipped cream or a drizzle of melted chocolate for extra indulgence.
