Keto Cheesy Sandwich Bread Rolls

Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 teaspoons baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 2 cups shredded cheese (such as cheddar, mozzarella, or a combination), divided
- 4 large eggs
- 1/4 cup unsalted butter, melted
- Optional: additional shredded cheese for topping
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly with butter or cooking spray.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, onion powder, Italian seasoning, and salt until well combined.
- Add Cheese: Stir in 1 1/2 cups of shredded cheese until evenly distributed throughout the dry ingredients.
- Combine Wet Ingredients: In a separate bowl, beat the eggs and melted butter together until well combined.
- Form Dough: Pour the wet ingredients into the dry ingredients and mix until a thick, sticky dough forms.
- Shape Rolls: Divide the dough into 8 equal portions. Roll each portion into a ball and place it on the prepared baking sheet, spacing them evenly apart.
- Top with Cheese (Optional): If desired, sprinkle additional shredded cheese on top of each roll for extra cheesiness.
- Bake: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the rolls are golden brown and firm to the touch.
