Keto Cheesecake Fruit Salad
Ingredients:
- For the Salad:
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- 1 small kiwi, peeled and sliced (optional)
- 1/2 cup chopped cucumber (optional for extra crunch)
- For the Cheesecake Dressing:
- 8 oz cream cheese, softened
- 1/2 cup heavy whipping cream
- 2-3 tbsp powdered erythritol (or another keto-friendly sweetener, adjust to taste)
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional, for tanginess)
Instructions:
- Prepare the Fruit:
- Wash and slice all the berries and fruits. Combine them in a large bowl. If you’re adding cucumber, chop it up and mix it with the fruits.
- Make the Cheesecake Dressing:
- In a mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
- Add the heavy whipping cream, powdered erythritol, vanilla extract, and lemon juice (if using). Continue mixing until well-combined and smooth.
- Combine:
- Gently fold the cheesecake dressing into the fruit mixture until the fruit is evenly coated.
- Serve:
- Serve immediately for the best texture or chill in the fridge for 30 minutes before serving. The flavors will meld together as it sits.
Tips:
- You can add a few mint leaves on top for freshness.
- For a different flavor, you can add a few crushed nuts, like almonds or pecans, on top.
