Keto Cheesecake Fruit Salad

Ingredients:

  • For the Salad:
    • 1 cup strawberries, sliced
    • 1 cup blueberries
    • 1 cup raspberries
    • 1 cup blackberries
    • 1 small kiwi, peeled and sliced (optional)
    • 1/2 cup chopped cucumber (optional for extra crunch)
  • For the Cheesecake Dressing:
    • 8 oz cream cheese, softened
    • 1/2 cup heavy whipping cream
    • 2-3 tbsp powdered erythritol (or another keto-friendly sweetener, adjust to taste)
    • 1 tsp vanilla extract
    • 1 tbsp lemon juice (optional, for tanginess)

Instructions:

  1. Prepare the Fruit:
    • Wash and slice all the berries and fruits. Combine them in a large bowl. If you’re adding cucumber, chop it up and mix it with the fruits.
  2. Make the Cheesecake Dressing:
    • In a mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
    • Add the heavy whipping cream, powdered erythritol, vanilla extract, and lemon juice (if using). Continue mixing until well-combined and smooth.
  3. Combine:
    • Gently fold the cheesecake dressing into the fruit mixture until the fruit is evenly coated.
  4. Serve:
    • Serve immediately for the best texture or chill in the fridge for 30 minutes before serving. The flavors will meld together as it sits.

Tips:

  • You can add a few mint leaves on top for freshness.
  • For a different flavor, you can add a few crushed nuts, like almonds or pecans, on top.
