Keto Cauliflower Hash Browns
Ingredients:
- 1 small head of cauliflower, grated or finely chopped
- 1/2 cup grated parmesan cheese
- 1/4 cup almond flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2-3 tablespoons olive oil or avocado oil for frying
Instructions:
- Prepare the Cauliflower:
- Wash and dry the cauliflower thoroughly. Grate it using a box grater or pulse in a food processor until it resembles rice-like pieces.
- Squeeze Out Excess Moisture:
- Place the grated cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to prevent soggy hash browns.
- Mix Ingredients:
- In a large bowl, combine the grated cauliflower, parmesan cheese, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
- Form Patties:
- Heat 1-2 tablespoons of oil in a non-stick skillet over medium heat.
- Take a spoonful of the cauliflower mixture and form it into a patty shape. Place it gently into the skillet. Depending on the size of your skillet, you can cook multiple patties at once, but make sure they have enough space between them.
- Cook Until Golden Brown:
- Fry the patties for 3-4 minutes on each side, or until they are golden brown and crispy. Carefully flip them using a spatula to ensure they hold their shape.
- Serve:
- Once both sides are golden and crispy, transfer the hash browns to a plate lined with paper towels to drain any excess oil.
- Serve hot, optionally garnished with fresh herbs or a dollop of sour cream.
