Keto Carrot Cake Roll

Ingredients:

For the Cake:

  • 3 large eggs
  • 1/4 cup granulated erythritol or another keto-friendly sweetener
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup finely grated carrot (about 1 medium carrot)
  • 1 teaspoon vanilla extract

For the Filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered erythritol or another keto-friendly sweetener
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a 10×15-inch baking sheet with parchment paper and lightly grease it.
  2. Prepare the Cake Batter:
    • In a large bowl, beat the eggs and erythritol until light and fluffy, about 3-4 minutes.
    • In a separate bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, nutmeg, ginger, and salt.
    • Gradually add the dry ingredients to the egg mixture, mixing until well combined. Stir in the grated carrot and vanilla extract.
  3. Bake the Cake:
    • Spread the batter evenly onto the prepared baking sheet. Bake for 12-15 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  4. Cool the Cake:
    • While the cake is baking, place a clean kitchen towel on a flat surface and dust it with a little powdered erythritol. Once the cake is done baking, immediately invert it onto the towel. Carefully peel off the parchment paper. Roll the cake and towel together, starting from one short end. Let it cool completely, about 1 hour.
  5. Prepare the Filling:
    • In a medium bowl, beat the cream cheese, butter, powdered erythritol, and vanilla extract until smooth and creamy.
  6. Assemble the Roll:
    • Once the cake is completely cool, unroll it and spread the cream cheese filling evenly over the surface. Carefully re-roll the cake without the towel. Place the roll on a serving plate.
  7. Serve:
    • Optionally, dust with additional powdered erythritol or garnish with a few chopped nuts. Slice and enjoy!
