keto calzone chunks

Ingredients:
For the Dough:
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 ½ cups almond flour
- 1 tsp baking powder
- 1 large egg
For the Filling:
- ½ cup cooked and crumbled Italian sausage or diced pepperoni
- ½ cup shredded mozzarella cheese
- 2 tbsp marinara sauce (sugar-free)
- Optional: Diced bell peppers, mushrooms, or olives
For Topping:
- 1 tsp Italian seasoning
- 1 tbsp grated Parmesan cheese
Instructions:
- Preheat Oven: Set the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the Dough:
- In a microwave-safe bowl, melt mozzarella and cream cheese together for about 1-2 minutes, stirring halfway through until smooth.
- Add almond flour, baking powder, and the egg to the cheese mixture. Knead until you get a smooth dough.
- Divide Dough: Divide the dough into small portions (about golf ball size) and flatten each portion into a small circle.
- Add the Filling:
- Place a small amount of sausage, shredded mozzarella, marinara sauce, and any optional fillings into the center of each circle.
- Fold the dough over to form a semi-circle and press the edges to seal.
- Bake:
- Place the calzone chunks on the prepared baking sheet. Sprinkle with Italian seasoning and Parmesan cheese.
- Bake for 12-15 minutes or until golden brown.
- Serve: Let cool slightly before serving. Enjoy with a side of marinara or ranch dressing for dipping!
