keto calzone chunks

Ingredients:

For the Dough:

  • 1 ½ cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 ½ cups almond flour
  • 1 tsp baking powder
  • 1 large egg

For the Filling:

  • ½ cup cooked and crumbled Italian sausage or diced pepperoni
  • ½ cup shredded mozzarella cheese
  • 2 tbsp marinara sauce (sugar-free)
  • Optional: Diced bell peppers, mushrooms, or olives

For Topping:

  • 1 tsp Italian seasoning
  • 1 tbsp grated Parmesan cheese

Instructions:

  1. Preheat Oven: Set the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Dough:
    • In a microwave-safe bowl, melt mozzarella and cream cheese together for about 1-2 minutes, stirring halfway through until smooth.
    • Add almond flour, baking powder, and the egg to the cheese mixture. Knead until you get a smooth dough.
  3. Divide Dough: Divide the dough into small portions (about golf ball size) and flatten each portion into a small circle.
  4. Add the Filling:
    • Place a small amount of sausage, shredded mozzarella, marinara sauce, and any optional fillings into the center of each circle.
    • Fold the dough over to form a semi-circle and press the edges to seal.
  5. Bake:
    • Place the calzone chunks on the prepared baking sheet. Sprinkle with Italian seasoning and Parmesan cheese.
    • Bake for 12-15 minutes or until golden brown.
  6. Serve: Let cool slightly before serving. Enjoy with a side of marinara or ranch dressing for dipping!
