Keto Breakfast Sausage & Guacamole Stacks

Ingredients:

  • 4 breakfast sausage patties (use your favorite low-carb brand or homemade)
  • 1 ripe avocado
  • 1 small tomato, diced
  • 1/4 small red onion, finely diced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional, for cooking)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • Fresh lime wedges, for garnish (optional)

Instructions:

  1. Cook the sausage:
    • If you’re using pre-made sausage patties, cook them according to package instructions.
    • If making your own sausage, simply form patties from ground pork (or a mix of ground meat) and season them with salt, pepper, and any spices you like (such as garlic powder or crushed red pepper flakes). Cook them in a skillet over medium heat with a little olive oil, about 3-4 minutes per side until cooked through and browned.
  2. Make the guacamole:
    • While the sausage is cooking, prepare the guacamole. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth or leave it a bit chunky, depending on your preference.
    • Add the diced tomato, onion, cilantro, lime juice, salt, and pepper. Mix well to combine.
  3. Assemble the stacks:
    • Once the sausage patties are done, place one on a plate as the base of your stack.
    • Spoon a generous amount of guacamole on top of each sausage patty.
    • Sprinkle with shredded cheese if you like, and if you want it extra melty, you can place the stacks under the broiler for a couple of minutes.
  4. Serve and garnish:
    • Serve the stacks immediately with fresh lime wedges on the side, if desired.
    • You can also sprinkle a little extra cilantro on top for a fresh, herby kick.
