Ingredients:

  • 1 lb large sea scallops (about 12-15 scallops)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried parsley (or fresh if you prefer)
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Optional: a pinch of red pepper flakes for some heat

Instructions:

  1. Prepare the Scallops:
    • Pat the scallops dry with paper towels. This is crucial for achieving a good sear in the air fryer.
    • Remove the tough muscle on the side of each scallop if it’s still attached.
  2. Seasoning:
    • In a bowl, mix the olive oil, lemon juice, minced garlic, dried parsley, paprika, salt, and black pepper.
    • Add the scallops to the bowl and toss to coat them evenly with the marinade. Let them marinate for about 15-30 minutes for the best flavor.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  4. Cook the Scallops:
    • Place the marinated scallops in a single layer in the air fryer basket. Avoid overcrowding; you might need to cook them in batches depending on the size of your air fryer.
    • Cook the scallops at 400°F (200°C) for 8-10 minutes, shaking the basket halfway through cooking. They should be golden brown and cooked through. Scallops cook quickly, so keep an eye on them to avoid overcooking.
  5. Serve:
    • Once cooked, remove the scallops from the air fryer and transfer them to a plate.
    • Garnish with additional lemon juice, fresh parsley, or a light sprinkle of sea salt if desired.
