IRON SKILLET BLACKBERRY COBBLER

This easy pizza casserole recipe is a pleaser. My entire family devoured it and raved about how great it was.

This Iron Skillet Blackberry Cobbler recipe is easy to make and great as a dessert with any meal.  Just add some whipped cream or ice cream and this won’t last long.  Can be reheated in the microwave or oven.  This is best served warm right from the oven but I can eat it cold and love it for breakfast with coffee

Ingredients:

For the Filling:

  • 4 cups fresh blackberries
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Zest of one lemon

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the fresh blackberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Toss the blackberries until they are well coated in the sugar and cornstarch mixture.
  3. Transfer the blackberry mixture to a seasoned iron skillet.
  4. In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt for the cobbler topping.
  5. Add the unsweetened applesauce, unsweetened almond milk, and vanilla extract to the dry ingredients. Mix until just combined. The batter will be thick.
  6. Drop spoonfuls of the cobbler topping over the blackberry filling in the skillet, spreading it out as evenly as possible.
  7. Bake in the preheated oven for 30-35 minutes or until the cobbler topping is golden brown and the blackberry filling is bubbly.
  8. Allow the cobbler to cool for a few minutes before serving.
