Perfectly Balanced Ingredients

Our recipe balances whole wheat and all-purpose flour, ensuring a hearty yet tender crumb. With the precise combination of baking powder and baking soda, each slice rises to perfection, boasting a golden crust that promises a satisfying crunch. To sweeten, we opt for the natural richness of honey or the nuanced sweetness of maple syrup, harmonizing with the fruity undertones of the cranberries and oranges.

Nourishing Elements

Incorporating unsweetened applesauce and yogurt into the batter infuses moisture and tenderness, while maintaining a health-conscious approach to baking. The addition of orange juice, freshly squeezed for optimal vibrancy, and milk enriches the bread’s citrus profile, providing a refreshing contrast to the robust cranberries.

A Symphony of Aromas

The aroma of freshly grated orange zest permeates the kitchen as the bread bakes, signaling the arrival of a culinary masterpiece. Each slice promises a burst of citrus fragrance, evoking memories of sunny orchards and leisurely brunches.

Homemade WW Carnberry Orange Bread

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain yogurt or Greek yogurt
  • 1/4 cup orange juice (freshly squeezed if possible)
  • 1/4 cup milk (dairy or non-dairy)
  • 1 egg
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup fresh or frozen cranberries, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, mix together the honey or maple syrup, unsweetened applesauce, yogurt, orange juice, milk, egg, melted butter or coconut oil, vanilla extract, and orange zest until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. Gently fold in the chopped cranberries until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, spreading it out evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  8. Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer the bread to a wire rack to cool completely before slicing.
  9. Once cooled, slice and serve. Enjoy your homemade whole wheat cranberry orange bread!
