Homemade Vegan Sausages

๐งพ Ingredients:
Dry:
- 1 cup vital wheat gluten
- 2 tbsp nutritional yeast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- Optional: pinch of chili flakes for heat
Wet:
- 3/4 cup cooked and mashed chickpeas (or white beans)
- 2 tbsp soy sauce or tamari
- 1 tbsp tomato paste
- 1 tbsp olive oil (or any oil)
- 3/4 cup vegetable broth
- 1 tsp liquid smoke (optional but great for flavor)
๐ฉโ๐ณ Instructions:
- Mix dry ingredients in a bowl.
- In a separate bowl, mash chickpeas, then mix with all other wet ingredients until well combined.
- Combine wet and dry ingredients. Mix and knead for 2โ3 minutes until a dough forms. It should be elastic but not too dry.
- Divide the dough into 4 equal parts. Roll each into a sausage shape.
- Wrap each sausage tightly in parchment paper, then in foil (or use just parchment if avoiding foil). Twist ends like a candy wrapper.
- Steam sausages for 35โ40 minutes (use a steamer basket or place in a steaming rack over boiling water with lid on).
- Let them cool slightly, then refrigerate for firmer texture (best if left a few hours or overnight).
- Pan-fry or grill before serving for crispy edges and extra flavor!
๐ Tips:
- Add finely chopped mushrooms or sundried tomatoes for variation.
- For a gluten-free version, use chickpea flour and oats instead of vital wheat gluten, but note the texture will be softer and more like patties.
