Homemade Gluten-Free Scones (Vegan)

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk

Instructions:

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cubed butter to the flour mixture and use your hands or a pastry cutter to cut it in until the mixture resembles coarse crumbs.
  4. Add the buttermilk to the bowl and stir until just combined.
  5. Turn the dough out onto a floured surface and knead it a few times until it comes together.
  6. Roll out the dough to a thickness of about 1/2 inch (1.3 cm).
  7. Use a biscuit cutter or a round cookie cutter to cut out biscuits from the dough.
  8. Place the biscuits on the prepared baking sheet, spacing them about 1 inch (2.5 cm) apart.
  9. Bake the biscuits for 12-15 minutes, or until they are lightly golden on top.
  10. Serve the biscuits warm with butter and your favorite jam or honey.
