Homemade Beefaroni

Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and pepper to taste
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar or mozzarella cheese (optional for topping)
  • Fresh parsley or basil for garnish

Instructions:

  1. Cook the pasta:
    Cook elbow macaroni according to package directions until al dente. Drain and set aside.
  2. Cook the ground beef:
    In a large skillet, brown the ground beef over medium heat. Add the chopped onions and garlic, cooking until the beef is no longer pink and the onions are soft.
  3. Add the sauce:
    Stir in the tomato sauce, diced tomatoes, Italian seasoning, paprika, sugar (if using), salt, and pepper. Bring to a simmer and cook for about 10-15 minutes, allowing the flavors to meld.
  4. Combine the pasta and sauce:
    Add the cooked macaroni to the skillet and stir until the pasta is well coated with the beef and tomato sauce. Cook for another 5 minutes to let everything come together.
  5. Optional cheese topping:
    If you prefer a cheesy topping, transfer the beefaroni to a baking dish, sprinkle shredded cheese on top, and bake in the oven at 350°F (175°C) for 10-15 minutes until the cheese is bubbly.
  6. Serve:
    Garnish with fresh parsley or basil, and serve hot!
