Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup almond flour
- 1/3 cup unsweetened cocoa powder
- 2/3 cup granulated erythritol (like Lakanto or Swerve)
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking powder
- Optional: 1/4 cup sugar-free chocolate chips or chopped nuts
Instructions:
- Preheat oven to 175°C (350°F). Line a small square baking pan with parchment paper or grease it well.
- Melt butter in a saucepan or microwave. Add cocoa powder and erythritol. Stir until smooth.
- Let it cool slightly, then whisk in eggs one at a time. Add vanilla.
- Add almond flour, salt, and baking powder. Mix until just combined.
- Fold in chocolate chips or nuts if using.
- Pour the batter into the pan and spread evenly.
- Bake for 18–22 minutes. Don’t overbake – the center should be just set for a fudgy texture.
- Cool completely before slicing (the hardest part – but worth the wait!).
