Healthy Chicken Salad with Apples & Cranberries

Ingredients:-

  • 2 cups cooked chicken breast, diced or shredded
  • 1/2 cup Greek yogurt (or low-fat mayo if preferred)
  • 1 tablespoon Dijon mustard
  • 1/2 cup celery, finely chopped
  • 1/2 cup apple, diced (choose a crisp variety like Granny Smith)
  • 1/4 cup dried cranberries (unsweetened if possible)
  • 1/4 cup red onion, finely chopped
  • Salt and pepper to taste
  • Lettuce leaves or whole-grain bread for serving (optional)

Instructions:-

  1. Prepare the Chicken: Cook chicken breasts (you can boil, bake, or grill) until fully done. Allow it to cool, then dice or shred into bite-sized pieces.
  2. Mix Dressing: In a mixing bowl, combine Greek yogurt (or low-fat mayo) with Dijon mustard. This will act as the base for your salad dressing.
  3. Combine Ingredients: Add the diced chicken, celery, diced apple, dried cranberries, and chopped red onion to the bowl with the dressing.
  4. Seasoning: Season the mixture with salt and pepper according to your taste. Mix everything thoroughly until well combined and coated evenly with the dressing.
