Greek Yogurt Cheesecake Parfait
Ingredients:
- For the cheesecake yogurt mixture:
- 1 ½ cups plain Greek yogurt (preferably whole milk or 2%)
- 4 oz cream cheese, softened
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional, for tanginess)
- For the parfait layers:
- ½ cup graham cracker crumbs (or digestive biscuits, crushed)
- 2 tbsp butter, melted
- 1 tbsp sugar (optional)
- 1 ½ cups mixed berries (strawberries, blueberries, raspberries) or any fruit of your choice
Instructions:
1. Make the Cheesecake Yogurt Mixture:
- In a medium bowl, beat together the cream cheese and honey (or maple syrup) until smooth.
- Add the Greek yogurt, vanilla extract, and lemon juice, and continue to beat until smooth and well combined. Set aside.
2. Prepare the Graham Cracker Crust:
- In a separate bowl, mix the graham cracker crumbs with melted butter and sugar (if using) until it resembles wet sand.
3. Assemble the Parfaits:
- Take small glasses or parfait cups and layer them as follows:
- Add a layer of graham cracker mixture at the bottom.
- Spoon a layer of the cheesecake yogurt mixture on top of the crumbs.
- Add a layer of berries or fruit on top of the yogurt mixture.
- Repeat the layers until you reach the top of your glass.
4. Serve:
- Chill the parfaits in the fridge for about 30 minutes if you want them extra cool, or serve immediately. Optionally, garnish with extra berries, a drizzle of honey, or some fresh mint leaves.
Tips:
- You can swap the berries for any other fruit you like such as peaches, mangoes, or bananas.
- For a richer flavor, use full-fat Greek yogurt and cream cheese.
- If you prefer a lower-sugar version, you can reduce or skip the sugar in the graham cracker crust.
