Greek Yogurt Cheesecake Parfait

Ingredients:

  • For the cheesecake yogurt mixture:
    • 1 ½ cups plain Greek yogurt (preferably whole milk or 2%)
    • 4 oz cream cheese, softened
    • ¼ cup honey or maple syrup
    • 1 tsp vanilla extract
    • 1 tbsp lemon juice (optional, for tanginess)
  • For the parfait layers:
    • ½ cup graham cracker crumbs (or digestive biscuits, crushed)
    • 2 tbsp butter, melted
    • 1 tbsp sugar (optional)
    • 1 ½ cups mixed berries (strawberries, blueberries, raspberries) or any fruit of your choice

Instructions:

1. Make the Cheesecake Yogurt Mixture:

  • In a medium bowl, beat together the cream cheese and honey (or maple syrup) until smooth.
  • Add the Greek yogurt, vanilla extract, and lemon juice, and continue to beat until smooth and well combined. Set aside.

2. Prepare the Graham Cracker Crust:

  • In a separate bowl, mix the graham cracker crumbs with melted butter and sugar (if using) until it resembles wet sand.

3. Assemble the Parfaits:

  • Take small glasses or parfait cups and layer them as follows:
    1. Add a layer of graham cracker mixture at the bottom.
    2. Spoon a layer of the cheesecake yogurt mixture on top of the crumbs.
    3. Add a layer of berries or fruit on top of the yogurt mixture.
    4. Repeat the layers until you reach the top of your glass.

4. Serve:

  • Chill the parfaits in the fridge for about 30 minutes if you want them extra cool, or serve immediately. Optionally, garnish with extra berries, a drizzle of honey, or some fresh mint leaves.

Tips:

  • You can swap the berries for any other fruit you like such as peaches, mangoes, or bananas.
  • For a richer flavor, use full-fat Greek yogurt and cream cheese.
  • If you prefer a lower-sugar version, you can reduce or skip the sugar in the graham cracker crust.
