Gluten-Free Keto Hot Cross Buns
Ingredients:
For the Buns:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup psyllium husk powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice (optional)
- 1/4 teaspoon ground cloves (optional)
- 3 large eggs
- 1/4 cup unsweetened almond milk (or other keto-friendly milk)
- 1/4 cup melted coconut oil or butter
- 2 tablespoons erythritol or other keto-friendly sweetener (adjust to taste)
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon vanilla extract
- 1/4 cup raisins or currants (optional, but not strictly keto)
For the Crosses:
- 2 tablespoons almond flour
- 2 tablespoons water
For the Glaze (optional):
- 1 tablespoon apricot jam or keto-friendly syrup
- 1 teaspoon water

Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare Dry Ingredients:
- In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, baking soda, salt, cinnamon, allspice, and cloves.
- Mix Wet Ingredients:
- In a separate bowl, beat the eggs. Then add the almond milk, melted coconut oil (or butter), erythritol, apple cider vinegar, and vanilla extract. Mix well.
- Combine:
- Gradually add the wet ingredients to the dry ingredients, mixing until fully combined. If using, fold in the raisins or currants.
- Shape Buns:
- Divide the dough into 8-10 portions and shape them into buns. Place them on the prepared baking sheet.
- Prepare Crosses:
- In a small bowl, mix the almond flour and water to form a thick paste. Transfer this paste to a piping bag or a plastic bag with the tip cut off, and pipe a cross over each bun.
- Bake:
- Bake the buns for 20-25 minutes, or until they are golden brown and cooked through. A toothpick should come out clean when inserted into the center.
- Prepare Glaze (Optional):
- While the buns are baking, you can make the glaze by warming the apricot jam with water in a small saucepan until it becomes a liquid. Brush the glaze over the buns while they are still warm for a shiny finish.
- Cool:
- Allow the buns to cool on a wire rack before serving.
