Ingredients:

For the Buns:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice (optional)
  • 1/4 teaspoon ground cloves (optional)
  • 3 large eggs
  • 1/4 cup unsweetened almond milk (or other keto-friendly milk)
  • 1/4 cup melted coconut oil or butter
  • 2 tablespoons erythritol or other keto-friendly sweetener (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup raisins or currants (optional, but not strictly keto)

For the Crosses:

  • 2 tablespoons almond flour
  • 2 tablespoons water

For the Glaze (optional):

  • 1 tablespoon apricot jam or keto-friendly syrup
  • 1 teaspoon water

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare Dry Ingredients:
    • In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, baking soda, salt, cinnamon, allspice, and cloves.
  3. Mix Wet Ingredients:
    • In a separate bowl, beat the eggs. Then add the almond milk, melted coconut oil (or butter), erythritol, apple cider vinegar, and vanilla extract. Mix well.
  4. Combine:
    • Gradually add the wet ingredients to the dry ingredients, mixing until fully combined. If using, fold in the raisins or currants.
  5. Shape Buns:
    • Divide the dough into 8-10 portions and shape them into buns. Place them on the prepared baking sheet.
  6. Prepare Crosses:
    • In a small bowl, mix the almond flour and water to form a thick paste. Transfer this paste to a piping bag or a plastic bag with the tip cut off, and pipe a cross over each bun.
  7. Bake:
    • Bake the buns for 20-25 minutes, or until they are golden brown and cooked through. A toothpick should come out clean when inserted into the center.
  8. Prepare Glaze (Optional):
    • While the buns are baking, you can make the glaze by warming the apricot jam with water in a small saucepan until it becomes a liquid. Brush the glaze over the buns while they are still warm for a shiny finish.
  9. Cool:
    • Allow the buns to cool on a wire rack before serving.
