Grate the potatoes and onion using a box grater or a food processor.
Place the grated potatoes and onion in a clean kitchen towel or cheesecloth, and squeeze out as much liquid as possible. This will help make the pancakes crispy.
Mix the Ingredients:
In a large mixing bowl, combine the grated potatoes and onion.
Add the eggs, flour, salt, and pepper. Mix well until all ingredients are evenly combined.
Fry the Pancakes:
Heat a generous amount of oil in a large frying pan over medium-high heat.
Scoop about 2-3 tablespoons of the potato mixture into the pan for each pancake. Flatten them slightly with the back of the spoon or a spatula to form patties.
Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
Serve:
Remove the pancakes from the pan and drain on paper towels to remove any excess oil.
Serve hot, optionally with applesauce or sour cream.
