German Potato Pancakes
Ingredients:
- 4 medium-sized potatoes
- 1 small onion
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Oil (for frying)
- Applesauce or sour cream (for serving, optional)
Instructions:
- Prepare the Potatoes and Onion:
- Peel the potatoes and the onion.
- Grate the potatoes and onion using a box grater or a food processor.
- Place the grated potatoes and onion in a clean kitchen towel or cheesecloth, and squeeze out as much liquid as possible. This will help make the pancakes crispy.
- Mix the Ingredients:
- In a large mixing bowl, combine the grated potatoes and onion.
- Add the eggs, flour, salt, and pepper. Mix well until all ingredients are evenly combined.
- Fry the Pancakes:
- Heat a generous amount of oil in a large frying pan over medium-high heat.
- Scoop about 2-3 tablespoons of the potato mixture into the pan for each pancake. Flatten them slightly with the back of the spoon or a spatula to form patties.
- Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Serve:
- Remove the pancakes from the pan and drain on paper towels to remove any excess oil.
- Serve hot, optionally with applesauce or sour cream.
