German Potato Pancakes

Ingredients:

  • 4 medium-sized potatoes
  • 1 small onion
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Oil (for frying)
  • Applesauce or sour cream (for serving, optional)

Instructions:

  1. Prepare the Potatoes and Onion:
    • Peel the potatoes and the onion.
    • Grate the potatoes and onion using a box grater or a food processor.
    • Place the grated potatoes and onion in a clean kitchen towel or cheesecloth, and squeeze out as much liquid as possible. This will help make the pancakes crispy.
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the grated potatoes and onion.
    • Add the eggs, flour, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Fry the Pancakes:
    • Heat a generous amount of oil in a large frying pan over medium-high heat.
    • Scoop about 2-3 tablespoons of the potato mixture into the pan for each pancake. Flatten them slightly with the back of the spoon or a spatula to form patties.
    • Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
  4. Serve:
    • Remove the pancakes from the pan and drain on paper towels to remove any excess oil.
    • Serve hot, optionally with applesauce or sour cream.
