Garlic Butter Chicken with Mushrooms & Peppers

Ingredients:
- 2–3 boneless skinless chicken breasts, cut into bite-sized chunks or thin strips
- 2 tablespoons olive oil
- 3 tablespoons butter, divided
- 4 garlic cloves, minced
- 1 cup mushrooms, sliced (white button or cremini)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Salt & pepper, to taste
- 1 teaspoon Italian seasoning (or mix of oregano, basil, and thyme)
- Optional garnish: chopped parsley or grated Parmesan

Instructions:
- Prep and season chicken
- Season chicken pieces with salt, pepper, and Italian seasoning.
- Cook chicken
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Add chicken and sear until golden brown and cooked through (6–8 minutes). Remove from skillet and set aside.
- Sauté vegetables
- In the same skillet, add 1 tablespoon butter.
- Sauté garlic for 30 seconds until fragrant.
- Add mushrooms and peppers. Cook for 5–7 minutes, stirring occasionally, until veggies are tender but still vibrant.
- Combine and finish
- Return chicken to the skillet. Add the remaining 1 tablespoon butter.
- Toss everything together and cook another 2–3 minutes until heated through and coated in garlic butter.
- Serve
- Serve hot over rice, pasta, or with crusty bread.
