Garlic Butter Chicken with Mushrooms & Peppers

Ingredients:

  • 2–3 boneless skinless chicken breasts, cut into bite-sized chunks or thin strips
  • 2 tablespoons olive oil
  • 3 tablespoons butter, divided
  • 4 garlic cloves, minced
  • 1 cup mushrooms, sliced (white button or cremini)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Salt & pepper, to taste
  • 1 teaspoon Italian seasoning (or mix of oregano, basil, and thyme)
  • Optional garnish: chopped parsley or grated Parmesan

Instructions:

  1. Prep and season chicken
    • Season chicken pieces with salt, pepper, and Italian seasoning.
  2. Cook chicken
    • Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
    • Add chicken and sear until golden brown and cooked through (6–8 minutes). Remove from skillet and set aside.
  3. Sauté vegetables
    • In the same skillet, add 1 tablespoon butter.
    • Sauté garlic for 30 seconds until fragrant.
    • Add mushrooms and peppers. Cook for 5–7 minutes, stirring occasionally, until veggies are tender but still vibrant.
  4. Combine and finish
    • Return chicken to the skillet. Add the remaining 1 tablespoon butter.
    • Toss everything together and cook another 2–3 minutes until heated through and coated in garlic butter.
  5. Serve
    • Serve hot over rice, pasta, or with crusty bread.
