Garlic And Rosemary Potatoes With Kale, Onion, Chickpeas And Kidney Beans.

This is incredibly easy to make. I just washed my veggies, crushed up my garlic and rosemary, chopped up the potatoes and kale, then threw everything in a pan with a generous splash of aquafaba (the water from the can of chickpeas) and let it all steam up for about 10 mins on med heat stirring occasionally.

Super simple and only about 30 mins prep + cook time gave me enough for 2 whole meals.

Season with gatlic salt, garlic powder, turmeric, black pepper, and cumin or whatever herbs and spices your little heart desires. Maybe throw some vegan cheese on it and pop it in the oven for a nice casserole? Idk it’s garlic and potatoes, you really can’t go wrong just have fun it’s gonna be delicious no matter what! That’s why it’s a perfect vehicle to get down some kale and turmeric for their amazing health benefits if you’re not too keen on the taste of them.
